2-Bean Chili

2 tbsp. Olive oil
1 large, chopped onion
1 pound ground beef
2 large, chopped green bell pepper
1 tbsp. Chili powder
3 cups tomato juice
¼ tsp. Black pepper (ground)
1 15-ounce can of kidney beans (rinsed, drained)
1 15-ounce can of great northern beans (rinsed, drained)
Chopped tomato
Cheddar cheese (for toppings)
Green onion, sliced

Preparation Instructions:

Cook beef and onions in oil and wait until the meat turns brown. Drain to put off fat.

After draining, add tomato juice and then transfer it to a slow cooker. Stir the tomatoes, lime juice, cornmeal, broth and seasonings.

Place the cover and give the mixture approximately 8 hours in the slow cooker.

Serve this over a cup of rice with green onions, tomatoes and cheese or sour cream for the toppings for a little bit more spice.
