Preparation Instructions:

Begin by heating 2 tablespoons of olive oil using a 4-quart pot set on medium heat. Add and sauté the jalapenos for a minute. Then, put the fresh ground pork. Stir until it turns brown. After that, remove the sautéed jalapenos and ground pork from the pot.

Using the same 4-quart pot, put the butter, onion and the rest of the olive oil. Cook and sauté the onion ‘til it starts becoming tender. Add spices such as paprika, salt, cayenne, black pepper and cumin and wait ‘til the onion becomes soft. Add the garlic and stir for a minute.

Switching from medium to low heat, get the flour and sprinkle it over the garlic and onion. Stir for about 3 minutes. Over the onion mixture, carefully pour in the enchilada sauce. Continuously whisk to avoid lump formations. Add a quart of water and the green salsa.

Bring the jalapenos and cooked ground pork back to the 4-quart pot. Switch from low to medium heat and let the soup boil. After it boils, decrease the heat. Let the mixture simmer for half an hour. Remove the mixture from heat. Mix in the lime juice and chopped cilantro before serving.
